5:00 AM – The Early Start

The ovens are preheating before the sun comes up. There’s something magical about a quiet kitchen in the early morning hours.

6:00 AM – Mise en Place

Everything in its place. We measure, weigh, and prepare all ingredients for the day’s batches. Precision is key.

7:00 AM – Shortbread Production

Our best-selling Classic Shortbread goes in first. The aroma of butter and vanilla fills the kitchen.

10:00 AM – Tea Cakes

Our cream-filled tea cakes require careful attention. Each one is filled and glazed by hand.

1:00 PM – Candied Nuts

The afternoon is for our candied pecans. The caramelization process requires constant attention.

3:00 PM – Packaging

Each product is carefully packaged by hand. We take pride in presentation because we believe the experience starts before the first bite.

5:00 PM – Clean Up
